• What [Veggies I've Eaten Since] Wednesday – #5

    Happy Wednesday! So I have to make this quick since I totally forgot it was already Wednesday! You can blame on that on the fact I had Monday off from work, so I think it’s really Tuesday. Let’s get to it!

    WEDNESDAY: Celebrating the Hallmark Holiday late, I made my man red velvet chocolate chip pancakes. Indulging is bliss. They turned out really well actually! I’ve never made pancakes from scratch before (I grew up in a Bisquick household) and I was kind of impressed with myself – ha. Conclusion? IMO, still: French Toast > Pancakes. Also no veggies, but having dessert for dinner is something we can all do every once in a while.

    THURSDAY: We traveled to Northern Africa (in our kitchen) on Thursday and made Israeli couscous. We decided to make some orange-glazed tempeh and roasted vegetables to the mix. Rich in protein, fiber and nutrients, this was a successful dish that I happily added to the recipe box. It will most certainly be making another appearance in our kitchen!

    FRIDAY: We made mushroom risotto on Friday night. Instead of used dried Porcini mushrooms like most recipes suggest, we used fresh Baby Bella mushrooms. It was so good, meaty and full of protein! Another one to add to the list!

    MONDAY: I had Monday off work so I made what I called Presidents Day Soup. OK, not really. It was just spiced vegetable lentil soup. Lots of root veggies, brown lentils, simmering away for an hour…mmm! Warmed me right up. I still have leftovers that I’m happily eating for lunches at work.

    In between the dinner madness I’ve been sticking to my usual soup and yogurt for lunch. Leftover soup, my Fage 0% blueberry and acai and I have all become best friends. I think it’s getting serious.

Trivia tonight with some friends and the start of Lent! I’m not Catholic, but I do give up something to try to “humble” myself or whatever. This year? Sweets! No more sweets for 40 days for yours truly. Last year REB and I gave up pizza and then decided to go without pizza until October when we were in Italy for the second leg of our honeymoon – the wait was worth it ;) This year, however, I am not giving up pizza. Unless I’m feeling uber adventurous. Have a good week everyone! <3

  1. Sweets is such a broad category to give up, that sounds really tough!

    I hope you post the recipe for Red Velvet Pancakes – I’ve seen many a creative pancake recipe in my day, but yours would be the first Red Velvet for me! :0)

  2. oooh I might join you in giving up sweets! I dont have a sweet tooth but when i get hooked on the idea of a sweet snack… i start to develop one and then crave it after dinner each night! Maybe cutting it back out cold turkey is the way to go! =)

      I’m already going through withdrawals LOL. Not really, but I COULD. I’m cutting out: cakes (sad), gelato (sadder), candy, cookies, popsicles.
      Luckily fruit, yogurt with fruit and my coffee with sugar-free creamer are still part of my life. Without coffee, it would be bad. Hrm, maybe I should have given THAT up instead…

    Your dinners look fantastic, especially Thursday’s meal! I have an unopened bag of Israeli couscous in my pantry just waiting to be used. :)

      Thank you, Faith! And thanks for stopping by. You should TOTALLY make the couscous then! I think it’s a much healthier alternative to rice or pasta as a side dish :)

  5. ahh I dont know… I did think of fasting a bit at least. I was having such a hot hunger earlier I had to have some frankfurts. Kind of already broke it. =I

    BUT I ll give my best in the next weekes! got some ideas now too for veg dishes!

      It’s hard to give something up or to fast! I admire you for being able to do that :) I can’t wait to see what dishes you’re going to write up next! I want to make your passionfruit preserves recipe I saw while reading through your blog the other day. YUM!
